Why was Milatea created?
Milatea was born at Green Spot, a young French company and pioneer in fermentation, with the ambition to offer professionals a sustainable, high-quality innovation designed for their needs and to spark creativity in pastry and bakery. Inspired by the versatility of chocolate, we reimagine recipes to be as sustainable and local as possible.

A delicate, poetic name, rooted in the past through the ancient fermentation method used by Green Spot, while looking toward the future. Milatea unveils a sensory and flavorful world where tradition meets innovation.
Where do Milatea’s ingredients come from?
Our ingredients are sourced mainly from European plant-based supply chains, selected for their quality, traceability, and proximity. We also upcycle side stream from fava beans (legumes) and grapes, which are then fermented in France to bring taste, color, and texture benefits to our recipes while increasing fibre content.

What is the carbon footprint of your products?
Each ingredient is carefully selected to ensure a reduced carbon footprint, significantly lower than that of conventional pastry ingredients such as chocolate. For more traditional recipes (such as pure cocoa fillings), we source from suppliers committed to sustainable agriculture.
What is the list of ingredients?

How can I use Milatea chips & co?
Our chips are ideal for inclusions in cookies, cakes, brioches, and viennoiseries. They retain both texture and taste after baking. We also offer formats designed to be melted and used as fillings or coatings, just like chocolate.
How can I use Milatea fillings?
Our ready-to-use fillings are perfect for pastries, viennoiseries, biscuits, and entremets, whether as a filling, topping, or finish. The hazelnut filling is bake-stable—without the use of tropical fats (palm or cocoa butter)—and also remains stable through freezing and thawing.
Does Milatea offer vegan products?
Yes! The majority of our products are 100% vegan. And when that’s not the case, we always provide a vegan alternative on request.

What is the shelf life of Milatea products?
Depending on the format (powder, filling, or chips), shelf life ranges from 6 to 12 months under appropriate storage conditions.
Do your products contain allergens?
All of our products are gluten-free, and most are lactose-free—we always offer a lactose-free option if the original product contains it. Some may contain plant-based allergens (e.g., hazelnuts, almonds). The exact list of allergens is provided in each technical sheet.
