The fava bean is a French legume cultivated for 7,000 years — hardy, low-maintenance, and remarkably beneficial for the soil. It’s the one we chose.
Féverolat® is our signature ingredient : its hull, long overlooked, is slowly and naturally fermented to reveal deep aromas of dried fruits, hazelnut and cocoa. Behind this indulgent flavour lies a committed approach: supporting farmers who choose more responsible agricultural practices, and making the most of a local resource that is naturally high in fibre.

Why did you create Milatea?
Milatea was born at Green Spot, a young French company pioneering fermentation, with a clear ambition: to offer baking and pastry professionals a sustainable, high-quality alternative to chocolate — designed around their technical constraints and built to inspire creativity. We drew on the versatility of chocolate to imagine equally adaptable ingredients, rooted in local and responsible supply chains.
What does Milatea mean?
A delicate, poetic name — anchored in the past, referencing the ancient fermentation methods that Green Spot has reimagined, and turned towards the future. Milatea evokes a sensory world where tradition and innovation meet, where every ingredient carries a story.
Where do Milatea’s ingredients come from?
Our ingredients are sourced primarily from European plant-based supply chains, selected for their quality, traceability and proximity. Féverolat®, our signature ingredient, is made from fermented fava bean hulls — a long-overlooked by-product, transformed into a flavourful, fibre-rich ingredient with deep, complex aromas.
What is fermentation?
Green Spot has developed a unique slow, natural fermentation process that transforms plant-based materials — primarily by-products — into indulgent, functional and sustainable ingredients. What is the carbon footprint of your products?
Every ingredient is chosen to keep our carbon footprint significantly lower than that of conventional chocolate. When cocoa is part of a recipe, we work exclusively with certified supply chains — Fair for Life or Rainforest Alliance.
What are the ingredients?

How can I use Milatea chips ?
Our chips are designed for inclusion in biscuits, cakes, brioches and pastries — holding their shape and flavour perfectly after baking. Some formats can also be melted and used as a filling or glaze, just like chocolate.
How do I use Milatea fillings?
Our ready-to-use fillings and spreads work as a garnish, glaze or finish — for biscuits, pastries, entremets and creative confections. Heat-stable without tropical fats (palm oil or cocoa butter), they also withstand freezing and thawing.
Are your products vegan?
Yes, our entire range is 100% vegan.

What is the shelf ?
Between 6 and 12 months depending on the format — powder, filling, spread or chips — under appropriate storage conditions.
Do your products contain allergens?
All our products are lactose-free. Most are also gluten-free and cocoa-free. Some recipes include tree nuts (hazelnuts, almonds), but allergen-free options are available. Full details are listed on each technical sheet, available on request.
Are your products nutritionally better than chocolate?
Our products are naturally high in fibre, thanks to Féverolat® — fermented fava bean hull is an exceptional source. Our fillings and spreads also contain less sugar than leading market references.
In what formats is Milatea available?
The Milatea range comes in four formats:
Chips & more — for inclusions in biscuits, cakes and pastries, or to melt and use like chocolate
Ready-to-use fillings — for pre or post-baking inclusion
